I want to go after the jumping catfish. They have invaded the Mississippi River
and are displacing a lot of other fish, but the cool part is that they are startled by
the noise of a boat motor and will jump right in the damned boat. So, I hope to
have an annual competetion wherein deluxe bass boats valued at 30k and up
will zoom up the Mississippi, and the first one to get sunk from being completely
full of jumping catfish wins!
The other possibility is "noodlin'" for catfish.

The silure is known to be a lucifugous fish which attends the deep
pits with an activity of important hunting for the paddle, the
twilight and of night. The best season to fish it is between June and
September... The theory it is quite beautiful, but the fishing of
silure is also practised in winter, leaves your canes and tracks with
pleasure.

Yeah, the Mekong Catfeesh is reputedly the big one,
reaching 10' and 350lbs. But it is said that nobody has
caught one like this since 2001--
I would like to try make ljutefisk from one of these;
there might be some flavour variation, but with enough
salt and bacon grease, this might be OK with lefse.

I've seen this done on TV. I can't remember if it was
Brittany Spears or Buster Keaton who was doing the noodling,
but they were going after hagfish; no mean feet when you
consider that hagfish are deep sea creatures.
Ok, I did some googling, and it was Brittany Spears.
Here's a photo of her publicist with her catch:

I have nothing to add here, I just like saying "googling for noodling."
